Heartburn & Other News

This is a parade for Mommy. Parade countdown is more exciting than Christmas, so far.

It has been FOREVER since I blogged. Forever. Every time I wanted to blog, I wanted to lay down about 1000 times more. There I said it. And even now, I really just want to lay down and snooze since Hudson is having a rare nap but I love this website and I don’t want it to slide into oblivion so here I am. Since it’s been weeks with zero contact, I’m just going to give you a little list of happenings since I stopped blogging to get back up to speed.

  1. I’m pregnant… 17.5 weeks and counting. The baby is moving so much now and our ultrasound to find out “who” is in my tummy will be in 17 days. I cannot wait!!!
  2. A few weeks ago, I finally started cooking again after weeks of easy meals and letting my hubby figure out at 5:30pm what we’d be eating for dinner. :-) I can’t wait to blog some of my eats!
  3. I think I’m nesting. Pantry cleaned out, kitchen cupboards re-organized, pictures going up on the walls, curtains getting hung. I like it. 
  4. We’ve got a little garden growing and so far, I haven’t killed anything! 
  5. However, I almost killed our squirrel population after they dug all through my garden, ripped out my zucchini plant and basically started to do what’s happened for the last 5 years… wreck my veggie garden. 
  6. But we bought a motion sensor sprinkler and it’s their worst nightmare. Now my garden is growing and totally untouched!!!!
  7. My husband fell off his bike… he mountain bikes and we think he cracked a few ribs. He never complains about pain and he’s been wincing and grimacing all the freakin’ time so it’s probably not bruising as we first thought. 
  8. With my last pregnancy, Luke fell off his bike and broke his collar bone when I was 30 weeks pregnant… he couldn’t do ANYTHING… like paint the baby room, put together furniture or help his boat of a wife just get through the last trimester. He’s a lucky man that I’m not 30 weeks pregnant and that it’s only ribs. I’d probably be pissed beyond blogable words if that happens again. (insert pageant smile here)
  9. I love you honey.
  10. Danie has been super busy with a zillion things at our church like surprise office renovations (amazing!!!!), a women’s conference, her first speaking gig (yahoo!!!!), plus the girl who practically taught me how to cook doesn’t love cooking these days. So that’s why she’s not around right now either! ;-) But I still like her. 
  11. I’ve been songwriting with my friend Rachael for over a year now and we’re actually almost finished… 5 new ones. It’s pretty fun, totally challenging and completely satisfying when lots of edits, discussion, band jams and more edits turn into a real song that isn’t half bad. 
  12. I just scored some perfect treasures for just a few bucks from this thrift shop in Lynden. I don’t know if I’ll tell you where. haha!
  13. Our dishwasher door only opens by yanking on the top of the door. I’m losing patience. But it still beats hand washing!! 
  14. My friend’s baby just got more rolls that I thought humanly possible. He’s like a living dessert. DELICIOUS!
  15. I signed up to volunteer for a food initiative (I-522) in Washington State’s next election. I’m excited to feel apart of a cause I am super passionate about. 
  16. I have heartburn.
  17. The Ski to Sea parade is in 2 sleeps and my boy is very excited about it. 
  18. The Farm parade in Lynden is in 9 sleeps. My husband and his brother will be driving their late Grandpa’s antique tractors in this parade, carrying on a sentimental tradition  I hope will continue for years and years to come! 
  19. Hudson opted out of riding on the tractor or a trailer behind because he didn’t want to miss all the other vehicles. Case closed.
  20. We had a chicken party AND an bowling party for Hudson’s birthday. Yes, 2 parties… it’s a perk of having a large family and tons of really good friends.
  21. Hudson moved into a “big boy” bed and he has no clue that he could get out and stall his bedtime after he’s all tucked in. Did I mention I just adore him? 
  22. We found out my husband has developed an allergy to cane sugar which explains why he’s had so much physical pain over the years… cold/flu-like symptoms. Fun fun.
  23. I’d just caved and bought a ton of freezer food from Trader Joes (with sugar in the ingredients) to get me through my 1st trimester when he told me the news. I was feeling so relieved to NOT think about food for at least a couple weeks. I stomped and cried and basically was a total princess for about 2 hours. Because this is totally his fault right? ;-) Then I got over it.
  24. This means I’m learning a whole new way to cook with other sweeteners like maple syrup, honey, coconut sugar… lots of cool options that are way better for you than cane sugar. It’s nickname is “white death” along with a few other white foods so maybe it’s a blessing in disguise to be learning new things. Ugh.
  25. I made raspberry vinaigrette from scratch because all the store options have cane sugar. Humbly, mine hit them all out of the park, took about 5 minutes to make and I will share!! 
  26. I laughed until I thought I was going to puke on Sunday night… at least 10 minutes of terrible, fantastic, painful, hilarious laughter like I’ve never experienced in my life. I may have peed my pants. This is just a rumor.
I’m sure many other things happened but these were the things that I thought of in 5 minutes of thinking. It’s work these days. Thanks for being our blog readers.

Crispy Orange Chicken

This is just like the orange chicken from the restaurant .. except I used chicken, not cats.

The Sauce 

Mix together:

  • 1/2 cup orange juice concentrate… NOT DILUTED
  • 2 Tablespoons soy sauce
  • 1/4 cup honey
  • 4 cloves pressed garlic
  • 2 tablespoons vinegar (Any kind) I used rice wine
  • 2 teaspoons cornstarch
  • 2 tablespoons brown sugar

The Meat

  • Cube 3-4 large chicken breasts or 2 whole cats… JUST KIDDING! I love animals, really:) 
  • 1/2 cup flour.

Preheat oven to 350 degrees
Toss in a zip-lock bag and shake it!

In a cast iron skillet heat around 1/2 cup coconut oil (Or oil of choice) over med-high heat. Add the chicken and cook till browned. 

Toss in a 9×13 baking dish. Cover with the orange sauce.

Bake for 20 minutes, serve with rice.

This is so good!!!! Really.

Happy Birthday to Hudson & BIG Happy News!

Yesterday was Easter Sunday. Happy Easter… I meant to post this yesterday but my internet decided to strike! But it was a great day to celebrate an ALIVE life, yes?

It was also my son’s 3rd birthday and because I’m a little bit obsessed with his handsome face, I’m going to share a few pictures from over the years. My heart squeezes just looking at these again…

 6 day old Hudson. Mmmmmmm.

7 months old. Don’t you love his jeans? 


Oh my. Jesus take the wheel… 

1.5 years old. That’s virgin hair there… not a scissor blade near it. I resisted as long as possible!

Little boy bliss. 

2.5 years old… those lips, those eyes… help me. My uterus squeezes.

And speaking of my uterus…

I’m pregnant!

And no, this is not an April Fools joke. I’ll share more about my happy news another day. But now you’ll understand why our blog has been fairly quiet lately. I’ve been pretty tired.
